En el artículo Chemistry behind vegetarianism (http://pubs.acs.org/stoken/presspac/presspac/full/10.1021/jf103846u) de Duo Li que aparece en el último número del Journal of Agricultural and food Chemistry (J. Agric. Food Chem., 2011, 59 (3), pp 777–784) se habla de los beneficios sobre la salud de los suplementos de la vitamina B12 y de los n-3 ácidos grasos poliinsaturados, especialmente para los veganos.
Si quereis practicar un poco de química, es un artículo muy interesante.
"On the basis of the present data, it is suggested that vegetarians, especially vegans, could benefit from increased dietary intake of n-3 PUFA and vitamin B12 and thus improve the balance ratio of n-3 to n-6 PUFA and vitamin B12 status, which may reduce any thrombotic tendency that might increase their generally low risk of cardiovascular disease"
